Hey there. Thanks for finding us.
We’re Cari Pollack and George Groccia, and this is our big leap into our new chapter.
After years in the corporate world—and more than one round of layoffs—we decided we were done working so hard for someone else’s bottom line. It was time to channel our energy, creativity, and long-simmering ideas into something that was ours. So we took an old-school Italian meatball recipe from George’s family vault, added a dash of bold vision, and rolled straight into a new chapter. AMAZEBALLS! isn’t just our food truck. It’s our reset button. Our big swing. Our way of bringing people together around flavor, fun, and food that makes you feel something.
We started with meatballs, but we didn’t stop there.
The first ball we served was rooted in Sunday dinners and tradition. But we also couldn’t resist the idea of blending global flavors and creating something that feels familiar and exciting. Korean BBQ? Falafel with cucumber salad? Buffalo chicken with ranch drizzle? Yes. We’re both in the kitchen, but George is the ops wizard (no leaking burners on his watch), and Cari’s the voice behind the brand, serving up social posts, customer joy, and stories like this one. Above all, we’re here to serve excellent food with kindness, creativity, and zero regrets.
This isn’t just a food truck. It’s a movement. A meatball-shaped one.
We believe in making our own rules, controlling our own future, and spreading as much joy as we can fit in a paper food boat. When you visit AMAZEBALLS!, we want you to feel welcomed, delighted, and full in every sense of the word.
